My name is Paul and I am the head chef and owner of Verse.

With over 20 years’ experience in some of the UK’s most respected kitchens — from Michelin-level restaurants to London corporate dining and hotels — my journey has led me to my own venture here in the South Hams.

Having developed my craft, I went to take on my biggest project yet — relocating our little family and leading the kitchen at Gara Rock Hotel, Devon. It was an incredible experience that gave me real insight into what it truly means to work in hospitality in this beautiful part of the world. Five years of Gara rock ‘n’ roll..this was one hell of a rollercoaster and I truly look back on my time here with the fondest of memories.

Working in London 6 years ago, doing my daily commute after a 15 hour day and sitting on the midnight train back from Euston crammed in like sardines with the smell of Burger King and merriment I would never have imagined id be running my own business in this beautiful region years from now but it’s all part of the journey and long may it continue. 

Verse is more than just a dining space; it’s hospitality done thoughtfully. Whether at home or in our restaurant, we want you to relax, enjoy, and connect with family and friends.

 

Our business is a reflection of everything I love: food, music, creativity, and bringing people together. It’s a space that feels welcoming and unpretentious, offering thoughtful cooking in a relaxed setting — a place to enjoy great food, good company, and memorable moments.
